Rainbow Chili
Meatless, heart healthy chili
Cook Time 55 minutes
Servings 5 quarts
Ingredients
- 6 cans beans *or 3 1/2 cups dry beans
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1 jalapeno, cored and diced
- 4 28 oz. cans diced tomatoes
- 2 large, purple onions, diced
- 8 cloves garlic or 2 Tbsp diced garlic
- 2 tbsp lime juice
- 2 tbsp apple cider vinegar
- 1/4 cup cilantro
Spices
- 3 tbsp Cumin
- 1 tsp Coriander
- 3 tbsp chili powder
- 1 tbsp smoked paprika
- 1 tsp chipotle powder
- 1/4 cup cocoa powder
- 1 tsp liquid smoke
- 1/2 tsp black pepper
- 1 tbsp salt
Instructions

Saute onions in a small amount of water or broth for 10 minutes. Add all peppers and cook an additional 10 minutes. Then add garlic and cook 5 more minutes. Add more water/broth as needed.

Add all other ingredients EXCEPT cilantro and bring to a boil. Reduce heat and keep a rolling low boil for 30 minutes. Remove from heat and stir cilantro into warm chili.

If you’re a fan of cheese and sour cream in your chili, add a dollop of Greek yogurt. You will be amazed at how great it tastes!
