Green Bean Casserole

Love green bean casserole, but hate the calorie count?  Try this healthy makeover of your holiday favorite.

Servings 6 people

Ingredients

  • 2 pounds fresh green beans
  • 1 tbsp Extra virgin olive oil
  • 1 clove garlic
  • 3/4 cupo walnuts (chopped)
  • 1/2 tbsp dried Rosemary
  • 1 oz crumbled goat cheese
  • 1 dash salt
  • black pepper to taste

Instructions

  1. Steam or boil green beans until crisp-tender and vibrant green (About 3-4 minutes)

  2. Drop beans in large bowl of ice water to stop cooking process

  3. Heat oil in large skillet on medium heat. Add garlic, onions, orange zest and walnuts. Sautee for about 1 minute.

  4. Add green beans to skillet with garlic mixture. Sautee until warm through (about 3 minutes). Add salt and pepper.

  5. Remove from skillet and plate. Top with crumbled goat cheese and serve.
