Rainbow Chili

Meatless, heart healthy chili

Ingredients

  • 6 cans beans *or 3 1/2 cups dry beans
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 jalapeno, cored and diced
  • 4 28 oz. cans diced tomatoes
  • 2 large, purple onions, diced
  • 8 cloves garlic or 2 Tbsp diced garlic
  • 2 tbsp lime juice
  • 2 tbsp apple cider vinegar
  • 1/4 cup cilantro

Spices

  • 3 tbsp Cumin
  • 1 tsp Coriander
  • 3 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tsp chipotle powder
  • 1/4 cup cocoa powder
  • 1 tsp liquid smoke
  • 1/2 tsp black pepper
  • 1 tbsp salt

Instructions

  1. Saute onions in a small amount of water or broth for 10 minutes. Add all peppers and cook an additional 10 minutes. Then add garlic and cook 5 more minutes. Add more water/broth as needed.

  2. Add all other ingredients EXCEPT cilantro and bring to a boil. Reduce heat and keep a rolling low boil for 30 minutes. Remove from heat and stir cilantro into warm chili. 

  3. If you're a fan of cheese and sour cream in your chili, add a dollop of Greek yogurt. You will be amazed at how great it tastes!
