Dark Chocolate Peanut Butter Cups

Your kids will never know these sweet delights are good for them!  You will never miss the store bought versions either.

Prep Time 20 minutes
Servings 4 pieces

Ingredients

  • 1 oz 60% cocoa chocolate chips Such as Ghirardelli Bittersweet Chocolate
  • 2 tsp natural chunky peanut butter Such as Smucker's Natural
  • 4 mini cupcake/muffin liners

Instructions

  1. Place liners into mini cupcake/muffin pan

  2. In a double boiler, seated at least 1 inch from boiling water, place chocolate chips. Heat chocolate until melted, stirring often, then carefully remove from heat.

  3. Place 1/2 tsp of melted chocolate into each liner, then place into refrigerator to set - about 5 minutes.

  4. Meanwhile, place peanut butter into microwave safe bowl and heat until softened.

  5. Remove pan with chocolate-filled liners from refrigerator and place 1/2 tsp of peanut butter into each liner on top of chocolate. Place pan back into refrigerator for an additional 5 minutes.

  6. Again, remove pan from refrigerator and top peanut butter with an additional 1/2 tsp of melted chocolate. Place pan back into refrigerator to set completely.

Recipe Notes

Each dark chocolate peanut butter cup is about 45 calories!  No worries!
