Quick Margherita Pizza (single serving)
Spring has officially sprung and bright, fresh herbs are a great way to liven up your weeknight dinners. Many grocery stores have started selling potted, fresh herbs in the produce section, so this is a great and convenient way to get your hands on some. Try replanting them in a decorative pot or even in large mason jars. For spring and summer fare, I recommend buying basil, cilantro and mint. Basil is great to include in pizza and pasta recipes, cilantro can be mixed into avocados with tomatoes and red onion to make a simple guacamole and mint can be tossed into a fresh fruit salad to make it extra special. Ingredients
- 1 10 inch whole wheat tortilla
- 1/4 cup pizza sauce
- 1/4 cup mozzarella cheese reduced fat
- 2-4 leaves fresh basil sliced into thin strips (chiffonade)
- 1 tbsp olive oil extra virgin
Instructions

Preheat oven to 425 degrees

Place tortilla on baking sheet, pizza wheel or cooking stone.

Spread pizza sauce onto tortilla, then sprinkle with cheese and basil.

Bake for 8-12 minutes or until cheese is completely melted and tortilla has reached desired crispiness.
